A CYPRUSPRIMAL RECIPE
PREPARATION TIME: 5 MINUTES
MAKES: 18 SMALL BALLS
Ingredients:
Cashew Protein Balls
11 Medjool dates
140 gr cashew nuts
Cocoa Orange Balls
11 Medjool dates
110 gr cashew nuts
60 gr raisins
2-3 tablespoons unsweetened cocoa powder
zest of one big orange
Directions:
1. Soak Medjool dates in hot water until soft. If the water reaches room temperature and the dates aren’t soft enough, soak in hot water again.
2. In a high powered blender or food processor pulse the cashews until they turn into small and crumbly bits. Don’t over blend it.
3. Add the rest of your ingredients to the blender or food processor and pulse until you end up with the sticky ball.
4. Add the mixture in a bowl and place in the freezer for about 20 minutes until mixture hardens.
5. Remove mixture from the freezer and roll into small bite size balls. Roll the balls into cocoa powder, shredded coconut or you might prefer them as they are with out coating.
6. Store in a container in the fridge for up to a week.

CASHEW PROTEIN BALLS
Quick, healthy and tasty snacks on the go, these balls are indeed my favorite snack! They only take a few minutes to make and are nutrient dense to keep you fueled throughout your day! They are filled with fiber, plant based protein, minerals and antioxidants and are great as mid-day snacks and as a post workout snack.
